1. 4 chicken legs with each leg cut into two
  2. 8pcs chicken sausages
  3. 1 medium chopped white onion
  4. 1 clove of garlic finely sliced
  5. 1 teaspoon chopped oregano
  6. 3 cups of tinned tomatoes
  7. 1 red pepper
  8. 1 green pepper
  9. 2 tablespoons fresh basil
  10. 1 tablespoon chopped parsley
  11. 1 decilitre vegetable oil
  12. Salt & pepper
  13. 1 white wine optional


  1. In a preheated skillet pan add oil, brown off the chicken legs over medium heat. Place on paper towels to absorb the excess fat then add the sausages and do as for the chicken
  2. Remove all but 3 tablespoons of the oil from the pan and add the onions, garlic, peppers, mushrooms and tomatoes and cook for 5 minutes over a high heat stirring continually
  3. Add the chicken and sausages and (red wine optional) bring to the boil slowly and place in a preheated oven 185C for approximately 30 minutes until tender and cooked. Can be served with pasta, mashed potatoes or a green salad
